• Question: Why are there so many different colours of the vegetable pepper, how do theyvp make them different colours.

      The colours are pigments, and they often occur as they rippen. So green peppers can turn red, or yellow or orange depending on what proportions there are. Some of it is genetic variation too. So I think some green peppers stay green no matter how long you leave them to ripen.
